La Maison 1888 sets the stage for the festival’s most expressive dining moments, bringing haute cuisine, fine wine, art and conversation into one intimate setting.
The opening evenings are led by Chef Christian Le Squer, who presents cuisine as the art form, composed with flavour, beauty and detail. The experience then evolves as Bill Bensley joins in person, unveiling his works alongside Chef Christian’s menu in a dialogue between art and gastronomy.

For two evenings, Bill Bensley joins Chef Christian in person for the festival’s defining experience, an encounter between whimsical art and haute cuisine, expressed course by course. As Bill unveils each art piece, Chef Christian responds through his menu, translating colour, form and imagination into a dining experience. It is a rare opportunity to witness two distinct artistic worlds come together at the table, creating something deeply personal and unlike anything else in Vietnam.
A French-led wine pairing accompanies the menu, selected to deepen the expression of each dish.
